Location: Tulsa, OK (Multiple Locations)
- Supervise, train, and motivate BOH staff to uphold JTR’s standards of quality, cleanliness, and professionalism.
- Lead pre-shift meetings, enforce systems, and maintain a culture of respect and accountability.
- Work collaboratively with FOH leadership to ensure smooth service.
- Ensure consistent and accurate preparation and presentation of all menu items.
- Uphold standards of portion control, recipe adherence, and plating.
- Oversee prep lists, line checks, and shift readiness.
- Manage inventory systems, order ingredients, and maintain par levels.
- Monitor food waste, portioning, and prep to reduce COGS and maintain profitability.
- Complete weekly inventory counts and work closely with the management team to analyze food cost trends.
- Enforce all health department standards, including proper food handling, sanitation, and cleanliness.
- Maintain equipment logs and work with vendors and facilities teams to resolve kitchen maintenance issues promptly.
- Ensure compliance with safety training, certifications, and documentation.
- Proven experience as a Kitchen Manager, Sous Chef, or similar leadership role in a full-service kitchen.
- Strong organizational and communication skills.
- Deep understanding of culinary techniques, BOH workflows, and kitchen operations.
- Proficiency in food costing, inventory management, and scheduling.
- Ability to lead by example in a fast-paced environment.
- Food Handler’s certification (ServSafe Manager preferred).
